- 1/4 c. Almond flour
- 1/2 c. Lowfat milk
- 4 x Scallions thinly sliced
- 6 ounce Bay shrimp, sweet Maine shrimp,
- Â Â or possibly smallest shrimp available
- 1 tsp Paprika
- 1/2 c. Fresh mint leaves
- 1 tsp Grnd cumin
- 1/4 c. Fresh oregano leaves
- 4 x Garlic cloves thinly sliced
- 1/4 c. Extra-virgin extra virgin olive oil plus
- 4 Tbsp. Extra-virgin extra virgin olive oil
- 3 Tbsp. Sherry vinegar
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- In a mixing bowl, stir together flours, add in lowfat milk and scallions and stir to create batter. Add in shrimp and paprika and chill 30 min.
- Meanwhile, place mint, cumin, oregano, garlic and 1/4 c. oil in a blender and blend till smooth. Add in vinegar, season with salt and pepper and pour into a serving bowl.
- Heat remaining oil in 3 nonstick pans till smoking. Drop shrimp batter into pans to create 3-inch pancakes (about 2 Tbsp. batter each) and cook till golden and crisp at edges. Remove to plate and keep in a hot oven. Continue till all the batter is finished. Serve hot with mojo.
- This recipe yields 12 tortillas.
