Ингредиенты

  • 1/4 c. Flour
  • 1/4 c. Almond flour
  • 1/2 c. Lowfat milk
  • 4 x Scallions thinly sliced
  • 6 ounce Bay shrimp, sweet Maine shrimp,
  •     or possibly smallest shrimp available
  • 1 tsp Paprika
  • 1/2 c. Fresh mint leaves
  • 1 tsp Grnd cumin
  • 1/4 c. Fresh oregano leaves
  • 4 x Garlic cloves thinly sliced
  • 1/4 c. Extra-virgin extra virgin olive oil plus
  • 4 Tbsp. Extra-virgin extra virgin olive oil
  • 3 Tbsp. Sherry vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

  1. In a mixing bowl, stir together flours, add in lowfat milk and scallions and stir to create batter. Add in shrimp and paprika and chill 30 min.
  2. Meanwhile, place mint, cumin, oregano, garlic and 1/4 c. oil in a blender and blend till smooth. Add in vinegar, season with salt and pepper and pour into a serving bowl.
  3. Heat remaining oil in 3 nonstick pans till smoking. Drop shrimp batter into pans to create 3-inch pancakes (about 2 Tbsp. batter each) and cook till golden and crisp at edges. Remove to plate and keep in a hot oven. Continue till all the batter is finished. Serve hot with mojo.
  4. This recipe yields 12 tortillas.
