- 1/2 loaf French bread
- Â Â cut in 1-inch cubes, (about 4 c.)
- 1/4 c. extra virgin olive oil
- 1 Tbsp. garlic salt
- 5 x tomatoes, diced
- 1 x onion, minced fine
- 2 c. arugula or possibly fresh basil, torn in pcs
- 1/4 c. balsamic vinegar
- 1/3 c. extra virgin olive oil
- 7 x cloves garlic, crushed
- 12 ounce jarred roasted red peppers, liquid removed and diced
- 1 c. kalamata olives, pitted and minced
- 1/2 c. toasted pine nuts
- Â Â Salad greens as needed
- 8 ounce fresh goat cheese, (optional)

- Makes 10 servings. LACTO/VEGAN
- CROUTONS: Saute/fry bread in oil till browned but still soft inside, about 5 min. Sprinkle with garlic salt. Set aside.
- SALAD: In large bowl combine first 10 ingredients; toss to mix well. Top with croutons and goat cheese if using.
- Makes 10 servings.
