Ингредиенты

  • 1/2 loaf French bread
  •     cut in 1-inch cubes, (about 4 c.)
  • 1/4 c. extra virgin olive oil
  • 1 Tbsp. garlic salt
  • 5 x tomatoes, diced
  • 1 x onion, minced fine
  • 2 c. arugula or possibly fresh basil, torn in pcs
  • 1/4 c. balsamic vinegar
  • 1/3 c. extra virgin olive oil
  • 7 x cloves garlic, crushed
  • 12 ounce jarred roasted red peppers, liquid removed and diced
  • 1 c. kalamata olives, pitted and minced
  • 1/2 c. toasted pine nuts
  •     Salad greens as needed
  • 8 ounce fresh goat cheese, (optional)

  1. Makes 10 servings. LACTO/VEGAN
  2. CROUTONS: Saute/fry bread in oil till browned but still soft inside, about 5 min. Sprinkle with garlic salt. Set aside.
  3. SALAD: In large bowl combine first 10 ingredients; toss to mix well. Top with croutons and goat cheese if using.
  4. Makes 10 servings.
