- 2 pkt (9 ounce) stouffer's creamed spinach, defrosted
- 3 Tbsp. Butter or possibly margarine
- 1/2 c. Chopped onion
- 1/3 c. Chopped carrot
- 1/3 c. Chopped celery
- 1/2 tsp Pepper
- 1/2 tsp Salt
- 1/2 c. Mushrooms, sliced & broken
- 2 tsp Garlic, chopped
- 3 Tbsp. Flour
- 1Â 1/2 c. Lowfat milk
- 1 can (28 ounce) diced tomatoes, undrained

- Thaw spinach in mircowave. Heat butter in sauce pan, add in onion, garlic, then carrots, celery, mushrooms; saute/fry' til tender 4-5 min. Stir in flour, stirring 1 minute. Add in lowfat milk gradually; cook stirring constantly till thickened, 2-3 min. Stir in tomatoes with juices, and creamed spinach. Cook till thoroughly heated.
