22 марта 2012Yum Marie! Your muffins look great. I thought they would be great for breakfast, now I am thinking that I would like to have one with a cup of coffee in the afternoon.
%20for%20these%20lovely%20treats!%20In%20fact%20Todd%20often%20curls%20his%20nose%20up%20in%20digust%20when%20he%20sees%20the%20bananas%20that%20I%20use%20for%20my%20baked%20goodies%20.%20.%20.%20however,%20once%20they%20are%20done,%20I%20have%20never%20seen%20him%20turn%20his%20nose%20up%20at%20the%20finished%20product!%20Ahem%20.%20.%20.%3C/p%3E%3Cp%3EI%20had%20some%20real%20doozies%20today,%20black%20as%20black%20as%20could%20be%20on%20the%20outside.%20One%20might%20almost%20have%20been%20tempted%20to%20pitch%20them%20into%20the%20bin%20.%20.%20.%20but%20I%20knew%20they%20would%20be%20perfect%20for%20baking%20with%20and%20so%20I%20baked%20some%20scrummy%20Banana%20Muffins%20for%20our%20elevenses.%3C/p%3E%3Cp%3ENot%20just%20Banana%20Muffins%20though%20.%20.%20.%20moist%20banana%20muffins,%20crammed%20full%20of%20lovely%20milk%20chocolate%20chips%20.%20.%20.%20but%20I%20didn't%20stop%20there%20.%20.%20.%20no,%20no%20.%20.%20.%20I%20didn't%20stop%20there.%3C/p%3E%3Cp%3EI%20topped%20them%20with%20an%20incredibly%20scrummy%20topping%20of%20an%20oat%20and%20brown%20sugar,%20buttery%20streusel,%20lightly%20flavoured%20with%20ground%20cinnamon.%3C/p%3E%3Cp%3EOh%20my%20.%20.%20.%20these%20are%20the%20best,%20the%20ABSOLUTE%20best,%20if%20I%20don't%20say%20so%20myself.%3C/p%3E%3Cp%3EBut%20don't%20take%20my%20word%20for%20it.%20Bake%20some%20for%20yourself.%20You'll%20see%20that%20I%20am%20quite%20.%20.%20.%20simply%20.%20.%20.%20right,%20once%20again!%20From%20the%20infamous%20Big%20Blue%20Binder%20.%20.%20.%20Banana%20Chocolate%20Chip%20and%20Oat%20Streusel%20Muffins.%3C/p%3E%3Cp%3E*Banana%20Chocolate%20Chip%20and%20Oat%20Streusel%20Muffins*%3C/p%3E%3Cp%3EMoist%20and%20delicious,%20stogged%20full%20of%20chocolate%20chips,%20with%20a%20moreish%20oaty%20brown%20sugar%20topping!%3C/p%3E%3Cp%3EFor%20the%20muffins:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190*C/375*F/%20gas%20mark%205.%20Line%2010%20muffin%20cups%20with%20paper%20liners%20or%20butter%20really%20well.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20baking%20powder,%20bicarbonate%20of%20soda,%20salt%20and%20golden%20caster%20sugar%20together%20in%20a%20large%20bowl.%20Stir%20in%20the%20chocolate%20chips.%20Whisk%20the%20mashed%20banana,%20egg%20and%20butter%20together.%3C/p%3E%3Cp%3EMake%20the%20topping%20by%20rubbing%20the%20flour,%20cinnamon%20and%20sugar%20together%20with%20the%20butter%20until%20the%20mixture%20resembles%20cornmeal.%20Stir%20in%20the%20oats.%3C/p%3E%3Cp%3EStir%20the%20banana%20mixture%20into%20the%20flour%20mixture,%20mixing%20only%20until%20the%20dry%20ingredients%20are%20evenly%20moistened.%20Divide%20equally%20amongst%20the%20prepared%20muffin%20cups.%20Sprinkle%20a%20heaped%20tsp%20of%20streusel%20topping%20over%20each.%20(You%20will%20have%20more%20than%20you%20need%20most%20likely,%20but%20put%20the%20rest%20in%20a%20small%20container%20in%20the%20freezer%20for%20another%20day.)%3C/p%3E%3Cp%3EBake%20for%2018%20to%2020%20minutes,%20until%20well%20risen%20and%20a%20toothpick%20inserted%20in%20the%20centre%20of%20one%20comes%20out%20clean.%20Let%20sit%20in%20the%20pan%20for%205%20minutes,%20then%20tip%20out%20onto%20a%20wire%20rack%20to%20finish%20cooling.%3C/p%3E%3Cp%3EYou%20do%20KNOW%20of%20course,%20that%20adding%20oats%20to%20something%20automatically%20makes%20it%20good%20for%20you.%20Tis%20true.%20Tis%20wisdom%20according%20to%20Marie.%20%E2%98%BA%3C/p%3E){kind=link}
