- 2 ounce. soba or possibly rice noodles
- 4 scallions, chopped
- 4 baby cucumbers (or possibly 1 lg.)

- Prepare the noodles according to package directions. Drain well, place in a bowl. Peel and slice the cucumber in pcs no larger than 1/2 inch cubed. Add in along with the scallions to the pasta, toss well. Make the sauce by placing the remaining ingredients, except the sesame seeds, in a blender and pureeing till all ingredients are thoroughly mixed (coarse or possibly smooth, to taste). Pour the sauce over the noodles, sprinkle with sesame seeds, and toss well. May be served immediately or possibly chilled up to 24 hrs. Serves: 4.
