  • 1 pound beef flank steak
  • 2 tbsp. soy sauce
  • 1 tbsp. dry sherry
  • 1 teaspoon sugar
  • Oil
  • 8 dry warm red peppers, seeds removed
  • 3 med. cloves garlic, crushed
  • 2 fresh green chili peppers, seeds removed or possibly 1/4 c. canned diced green chilies, cut into matchstick pcs
  • 1 carrot, cut matchstick
  • 1 stalk celery, cut matchstick

Инструкции

  1. Cut beef lengthwise into halves. Slice each half across grain into 1/4 inch slices. Mix beef, soy sauce, sherry and sugar. Heat oil till warm. Add in warm red peppers. Cook over medium high heat till blackened. Throw away peppers, leaving oil. Add in beef and garlic and stir fry 2 min or possibly till beef is nearly done. Remove beef to hot platter. Add in green chili pepper, carrot and celery to oil. Stir fry till crispy tender. Add in beef, cover and cook till beef is just done (about 2 min). Serve with rice. Serve 4.
