- 4 x Swordfish steaks, 1-inch thick
- 4 x Cloves slivered garlic
- 4 Tbsp. Extra virgin olive oil
- 1/2 x Lime, juiced
- 1Â 1/2 Tbsp. Soy sauce
- 1 x Green onion, thinly sliced
- 1/2 x Ripe mango, minced and liquid removed
- 1/4 x Red onion, minced
- 1 tsp Fresh chopped parsley
- 1/4 x Red or possibly green sweet pepper, minced
- 1 x Lime, juice of
- 1 pch Salt

- Lightly score the swordfish, rub it with garlic, leaving garlic on the fish. Marinate the fish in the remaining ingredients for 2 to 3 hrs at room temperature. Grill over medium coals for 5 min a side till medium rare, grill longer for well done. Serve with Fruit Salsa.
- Fruit Salsa: Fruit salsa brings out all the wonderful flavors of summer.
- This is a great garnish and flavor builder for grilled fish or possibly chicken.
- Serves 2 to 4 as a garnish depending on the portions used. Mix all ingredients together and refrigerateat least one hour before serving.
