- 1 lb Sweet onions -- sliced into
- Â Â Rounds
- 2 x Cloves garlic -- chopped
- 1 tsp Unsalted butter
- 2Â 1/2 Tbsp. Balsamic vinegar
- 1/2 tsp Salt
- Â Â pn Freshly grnd black pepper
- 5 whl plum tomatoes
- 1/2 c. Basil leaves -- loosely
- Â Â Packed
- 1/4 c. Low sodium chicken broth --
- Â Â Defatted

- In a large skillet, combine onions, garlic, butter, vinegar, salt and pepperwith 1 3/4 c. water; bring to a boil over high heat. Reduce heat to medium-low; simmer till most liquid has evaporated, about 45 min.
- continue to cook, stirring often, till onions are carmelized, about 15 minutsmore. Cut 3 tomatoes into thin wedges; add in to onions and cook, stirring occassionally, till tomatoes soften but retain their shape, 5 - 10 min.
- Set aside. This is the relish. Quarter remaining tomatoes; puree in food processor with basil. Strain. Return to food processor; add in stock and half therelish; puree. This is the marinade. Serve relish hot or possibly at room temperature.
