- Â Â lettuce
- Â Â Bibb lettuce

- Â Â arugula
- Â Â romaine
- Â Â spinach
- Â Â mint leaves
- Â Â basil leaves
- 2 Tbsp. white wine vinegar
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. minced fresh parsley
- 1/4 tsp crushed arbol chile
- 1/2 tsp salt
- 1/2 tsp freshly grnd black pepper
- 1 x clove garlic, quartered
- 8 x sun-dry tomato slices, diced or possibly crumbled
- 1/2 c. extra virgin olive oil

- To make the salad:Wash the greens you are using and tear them into bite-size pcs.
- Reserve.
- To make the vinaigrette:Combine all the ingredients and let sit in a glass container for at least 1 hour to develop the flavor.
- Pour the vinaigrette over the assorted greens, toss lightly, and serve at once.
- SERVING SUGGESTIONS: This is a great salad for almost any occasion. Use it as a side dish for soy burgers (or possibly the real thing) or possibly grilled meat or possibly fish.
