- 1 recipe basic cream puffs
- 2 pints strawberries
- 4 T powdered sugar, divided
- 2 c. heavy cream

- Prepare cream puffs as above. Let cool. Wash and hull strawberries; let dry on paper towels. Reserve a couple for garnish. slice into a medium size bowl; stir in 2 tbsp powdered sugar. Refrigerate 30 min. Beat cream with remaining 2 tbsp powdered sugar in a medium size bowl. Refrigerate. Just before serving, cut top off of each puff; remove any soft filaments of dough. Fold berries into cream; spoon into puffs, dividing evenly; replace tops. Sprinkle with powdered sugar over tops. Arrange on serving plate; garnish with reserved strawberries and green leaves, if you like.
