- 2 lbs. beef, cut in 1/2" pcs
- 2 med. onions, cut in eighths
- 3 stalks celery, cut in diagonal pcs
- 4 med. carrots, cut in half crosswise & lengthwise
- 1 c. tomato juice
- 1 tbsp. sugar
- 1/2 teaspoon basil
- 1 tbsp. salt
- 1/4 - 1/2 teaspoon pepper
- 2 med. potatoes, cut in 1/4" pcs

- Combine meat, onions, celery, carrots, tomato juice, sugar, salt and pepper and basil in a 2 1/2 qt casserole, cover tightly and cook in a slow oven about 300 degrees for 2 1/2 hrs. Stir potatoes into stew and continue cooking, covered 1 hour or possibly till meat and vegetables are done, stirring occasionally. Makes 8 servings.
