- 1/2 lb medium shrimp unpeeled
- 1/4 c. Nonfat Mayonnaise
- 1/4 c. Chicken Broth low sodium
- 1 tsp Lemon Rind grated
- 1 Tbsp. Lemon Juice
- Â Â Vegetable Cooking Spray
- 2 Tbsp. Vegetable Oil
- 1 Tbsp. Ginger Root grated
- 1 x Clove Garlic chopped
- 1 c. Asparagus Spears diagonally sliced in 1" pieces, about 1/2 lb
- 2 c. Pasta penne
- 1/4 tsp Lemon Pepper

- Peel and devein shrimp, set aside. Combine mayonnaise and next 3 ingredients in bowl; stir well with a wire whisk, set aside. Coat a wok orlarge nonstick skillet with cooking spay; add in oil, (I used my "homemade"
- extra virgin olive oil spay bottle, used maybe 1 tsp.) and place over medium-high heat till warm.
- Add in gingerroot and garlic; stir fry 1 minute. Add in shrimp and asparagus, stir fry 3 min oruntil shrimp is done. Add in mayonnaise mixutre and pasta; cook till thoroughly heated. Sprinkle with lemon pepper.
- Yield:2 servings (serving size 1 1/2 c.).
