- 1 lb semolina pasta
- 2 Tbsp. extra virgin olive oil
- 2 x cloves garlic
- Â Â crushed through a press
- 3 can diced tomatoes with juices 14.5z
- 1/2 tsp salt
- 1/2 tsp fresh grnd pepper
- 1/4 c. minced parsley
- 1/4 c. fresh basil
- Â Â grated parmesan cheese

- In a large saucepan, heat the oil. Add in the garlic and cook over medium heat, stirring, for 1 minute. Add in the tomatoes with their juices, salt and pepper. Bring to a boil, reduce the heat to medium low and simmer, partially covered, till slightly reduced, about 25 min. Cook pasta.
- Drain in a colander. Toss the pasta with the sauce, parsley and basil.
- Sprinkle with cheese and serve.
