- 8 ounce scallops
- 4 ounce linguine, cooked
- 1 (11 ounce) mandarin orange sections, liquid removed
- 2 T onion, minced
- 1/4 c. white vinegar
- 2 T salad oil
- 1 teaspoon orange peel, shredded
- 3/4 teaspoon dry mustard
- 1 (6 ounce) pkg. frzn pea pods, thawed
- 1/4 c. slivered almonds

- Put 1/2 large scallops in 2 qt dish. Put together scallops, 1/4 cup water and 1/8 tsp salt. Cover 100% power (high) 35 min till scallops are opaque, stirring once. Drain, cool, slice. Put together with linguine, oranges and onion. In a screw top container put together vinegar, oil, orange peel, mustard and pepper; shake well. Pour over scallops mix; mix. Cover and chill 3 hrs or possibly overnight. Just before serving, stir in pea pods; serve on lettuce with slivered almonds on top. Makes 4 servings.
