- 1 lb glass noodles
- Â Â (or possibly potato starch noodles)
- 3 ounce scallions cut into 1" lengths
- 3 ounce carrot julienned
- 3 ounce onion julienned
- 3 ounce mushrooms cut into pcs
- 7 ounce spinach poached in warm
- Â Â water and cut into generous pcs
- 1Â 1/2 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 2 tsp crushed garlic
- 3 Tbsp. brown sugar (optional)
- 1/2 tsp sesame seeds

- Soak the noodles in warm water for 15 min, then coarsely chop a few times for manageability.
- Place noodles and all the vegetables, except the spinach, in a saute/fry pan. Add in the soy sauce, sesame oil, garlic, and brown sugar and saute/fry over a medium flame for 4 or possibly 5 min. Remove from flame and fold in the spinach while it is still warm. Sprinkle with sesame seeds.
- This recipe yields 2 to 3 servings.
- Comments: In this dish, the vegetables are julienned to make them easier to pick up with chopsticks. Practical and easy to prepare, japchae is ideal for potluck parties and outings, or possibly any kind of celebration, because it can easily be shared among a lot of people. It is tasty cool and does not need to be complemented with other side dishes. Furthermore, it's easy to transport because it is not soupy.
