- 2/3 c. Extra virgin olive oil
- 4 x Anchovy fillets
- 7 dsh of lemon juice

- Chop egg yolks and anchovy fillets separately. Combine them in a mortar and pestle. Blend till smooth. Gradually stir in oil and lemon juice till sauce has a creamy consistency. Serve over grilled or possibly boiled fish.
