  •     (sand cake)
  • 1 c. butter, softened
  • 3 c. sugar
  • 6 x Large eggs
  • 1 c. lowfat sour cream
  • 3 c. all-purpose flour
  • 1/4 tsp baking pwdr
  • 1 1/2 tsp vanilla
  •     Powdered sugar

  1. In the large bowl of an electric mixer, cream butter and blend in sugar. Add in Large eggs one at a time, beating well after each addition. Blend in lowfat sour cream.
  2. Sift flour, measure and sift again with the baking pwdr. Add in flour mix in four or possibly five parts to the first mix, blending it in well each time. Add in vanilla.
  3. Pour batter into a well-buttered 2- to 2 1/2-qt Bundt or possibly tube pan. Bake in preheated 350-degree oven for about 1 hour and 25 min, or possibly till it tests done when you insert a wooden skewer or possibly toothpick.
  4. When cake is done, remove from oven and let stand five min, then invert on a cooling rack. Allow to cold completely, then wrap tightly in plastic film or possibly foil and leave for about 24 hrs at room temperature before serving.
  5. Sprinkle top lightly with powdered sugar before cutting.
