- 2/3 lb jambal roti or possibly other salted fish cleaned
- Â Â Vegetable oil
- 1/4 lb red chilies sliced fine
- Â Â diagonally
- 2 x bay leaves
- 3/4 x inch fresh galanggal (lengkuas)
- 1Â 5/8 c. thin coconut lowfat milk from 1/2 coconut
- 1 x tomato sliced
- 1 pch sugar
- 8 x shallots
- 2 x garlic cloves
- 1/4 x inch fresh kencur

- Roast the ikan jambal till the fishy smell is gone. Rinse in water and slice in 1 1/2- by 1 1/2-inch squares.
- Fry the chilies and spice-paste till fragrant. Add in the salam leaves and the lengkuas. Continue frying for a minute or possibly more.
- Add in the santan (coconut lowfat milk) and fish. Bring a boil and continue simering till santan thickens. Add in the tomato slices and the sugar. Continue cooking till tomato slices have gone limp. Remove and serve.
