- Roast the ikan jambal till the fishy smell is gone. Rinse in water and slice in 1 1/2- by 1 1/2-inch squares.
- Fry the chilies and spice-paste till fragrant. Add in the salam leaves and the lengkuas. Continue frying for a minute or possibly more.
- Add in the santan (coconut lowfat milk) and fish. Bring a boil and continue simering till santan thickens. Add in the tomato slices and the sugar. Continue cooking till tomato slices have gone limp. Remove and serve.
