- 20 lbs ground beef
- 16 oz eggs
- 2 lbs regular bread crumbs (not panko)
- 1/4 cup garlic powder
- 1/4 cup onion powder
- 1/2 cup worchestershire sauce
- 1 quart milk
- 2 oz beef base
- 2 oz LoSod beef base
- 2 Tbsp salt
- 2 Tbsp papper
Инструкции
- Combine spiced with bread crumbs.
- Blend the bases with the milk to make it liquid.
- Add the eggs and worchestershire sauce in mixing bowl, with paddle.
- Begin mixing beef and add the milk-egg-base mixture.
- As soon as it all comes together add the dry mix.
- Mix only until everything blends together.
- Do not over mix or steaks will be tough.
- Cook off a little 1 oz burger to taste for seasoning.
- Form into individual 4 oz oval/football shaped steaks (#8 scoop)
- Bake in a 325 F oven for 45 minutes.
- Pan up in hotel ppans for service, garnish with cooked onion beef au jus.
