16 Ozs Eggs
2 Lbs Regular bread crumbs(not panko)
1/4 Cups Garlic powder
1/4 Cups Onion powder
1/2 Cups Worchestershire sauce
1 Qts Milk
2 Ozs Beef Base
2 Ozs LoSod Beef base
2 Tbsps Salt
2 Tbsps Pepper

Инструкции

Combine spices with bread crumbs
Blend rhe bases with the milk to make it liquid. Add the eggs and worchestershire sauce in a mixing bowl, with paddle. begin mixing beef and add the milk-egg-base mixture.
As soon as it all comes together, add the dry mix
Mix only until everything blends together.
Do not oveer mix or steaks will be tough
Cook off a little 1 oz burger to taste for seasoning
Form into individual 4 oz oval/football shaped steaks (#8 scoop)
Bake in a 325 oven for 45minutes
Pan up in hotel pans for service, garnissh with cooked onions and beef au jus.
