Ingredients: 4 x Ears grilled corn; 2 x Poblano peppers, roasted; 1 x Red pepper, roasted; 2 x Tomatoes, minced; 1/4 c. Cilantro, minced; Juice of one lime; 1 Tbsp. Extra virgin olive oil; 1/4 lb Cheese, grated; 8 x Tortillas; 3 x Zucchini, sliced lengthwise; 3 x Yellow squash, sliced lengthwise; 3 x Roasted peppers, different colors,; Sliced; 1 x Eggplant sliced; 1/4 c. Minced basil

Ингредиенты

4 x Ears grilled corn
2 x Poblano peppers, roasted
1 x Red pepper, roasted
2 x Tomatoes, minced
1/4 c. Cilantro, minced

1 Tbsp. Extra virgin olive oil
1/4 lb Cheese, grated
8 x Tortillas
3 x Zucchini, sliced lengthwise
3 x Yellow squash, sliced lengthwise
3 x Roasted peppers, different colors,
Â Â Sliced
1 x Eggplant sliced
1/4 c. Minced basil

Инструкции

In large bowl combine all ingredients except cheese and tortillas. Place one tortilla on plate, layer salsa mix, and cheese, top with another tortilla and top with salsa. Serve.
