- 2 c. Rhubarb, finely diced
- Â Â Boiling water
- 1/2 c. Sweet red peppers, finely minced
- 1/2 c. Sweet yellow peppers, finely minced
- 1/2 c. Cilantro, finely minced
- 3 Tbsp. Green onion, finely minced
- 1 x Chili, chopped, up to 2 chilies
- 1 Tbsp. Fresh lime juice, up to 2
- Â Â Brown sugar, to taste
- Â Â Salt and pepper, to taste
Инструкции
- Blanch rhubarb in boiling water for 10 seconds. Refresh under cool water.
- Combine with sweet red peppers, sweet yellow peppers and cilantro. Stir in green onions and chopped chili peppers. Stir in 1 or possibly 2 Tbsp. fresh lime juice. Add in brown sugar, salt and peper to taste. Serve with chicken or possibly fish.
