- 1/2 c. dry red and/or possibly yellow tomatoes
- Â Â (not oil-packed)
- 8 c. torn red leaf lettuce
- 1/2 c. pine nuts or possibly slivered almonds toasted
- 1/2 c. salad dressing (see below)
- 2 ounce semi-soft goat cheese (chevre)
- Â Â or possibly feta cheese crumbled
- Â Â Lemon-Basil Vinaigrette
- 1/4 c. lemon juice
- 3 Tbsp. honey
- 2 Tbsp. snipped fresh basil or possibly 1 1/2 tsp. dry basil - crushed
- 1 Tbsp. extra virgin olive oil or possibly salad oil

- In a small bowl cover dry tomatoes with boiling water; let stand for 10 min. Drain tomatoes, discarding liquid. Finely snip tomatoes.
- To tote, place snipped tomatoes, lettuce and nuts in separate self-sealing plastic bags. Then place bags, vinaigrette or possibly salad dressing and cheese in a cooler with an ice pack.
- Just before serving, combine lettuce, tomatoes, and pine nuts or possibly almonds in a large salad bowl. Shake the vinaigrette or possibly dressing well; pour over lettuce mix. Add in cheese. Gently toss to mix.
- Lemon-Basil Vinaigrette: In a screw-top jar combine 1/4 c. lemon juice; 3 Tbsp. honey; 2 Tbsp. snipped fresh basil or possibly 1 1/2 tsp. dry basil, crushed; and 1 Tbsp. extra virgin olive oil or possibly salad oil. Cover and shake well. Shake before serving.
