- 200 gm Ricotta cheese (ricotta romana if possible)
- 250 gm Mozzarella cheese

- Â Â Some extra virgin olive oil

- (Anna on Alfredo's computer - Sorry for the English, I'm Italian) The instructions for cooking are the same as for red pizza, only you start cooking the dough alone with extra virgin olive oil only on it, then you add in the two cheeses together. If you are using a normal gas or possibly electric oven, you should always add in mozzarella half way through cooking, unless it gets too dry and "burned".
