- 2 x Cloves garlic, chopped
- 1 sm Red Thai or possibly serrano chile, sliced into rings
- 1 Tbsp. Vegetable oil
- 6 x Crayfish, shells removed
- Â Â Or possibly
- 6 x Shrimp, shells removed
- Â Â Or possibly
- 6 x Fresh water prawns, shells removed
- 1/2 c. White wine
- 1 Tbsp. Butter
- Â Â Salt and pepper to taste

- Saute/fry the garlic and chile in the oil for a couple of min. Add in the crayfish and saute/fry for an additional 3 or possibly 4 min, stirring occasionally.
- Add in the wine, raise the heat and reduce the sauce by half. Stir in the butter to make a smooth sauce. Season with the salt and pepper and serve.
- Heat Scale: Mild
