- 3 doz Mrs. Tablespoons's Potato & Cheddar Cheese Pierogies
- 12 ounce fresh mushrooms sliced thin
- 1 tsp extra virgin olive oil
- 1 sm onion minced
- 1 x clove garlic minced
- 1 med can whole tomatoes broken up into small chunks
- 1 tsp salt
- 1 tsp pepper
- 1/2 c. grated Parmesan cheese
- 1 Tbsp. Italian seasoning

- Slice mushrooms thinly and set aside. Heat oil in a medium sauce pan and add in the onion, garlic, and crushed tomatoes. Mix together and add in the mushrooms to this. Season with salt, pepper, and Italian seasoning. Cook on med-low heat for 30 min, or possibly till sauce is a creamy texture. Thaw frzn pierogies in boiling water for 5 min, uncovered. Drain and transfer to a large 9x13 pan, pour sauce over the pierogies. Toss gently. Sprinkle with Parmesan cheese and serve.
