- 2 Tbsp. extra virgin olive oil
- 8 x italian spiced fresh pork sausages meat removed from skins and crumbled
- 2 sm red onions peeled and minced
- 2 clv garlic peeled and minced
- 2 x smaii dry chillies crumbled
- 2 x bay leaves
- 1/3 bot red wine (preferably Chianti or possibly Sangiovese)
- 1 x 800g tin peeled plum tomatoes liquid removed
- 1/2 x nutmeg freshly grated
- Â Â sea salt and freshly grnd black pepper
- 120 gm parmesan freshly grated
- 150 ml double cream
- 250 gm penne rigate

- Heat the oil in a large pan and fry the sausage meat stirring and breaking up the pcs.
- After the juice from the meat has evapourated and the fat begins to run add in the onion garlic chill) and bay leaves.
- Cook gently for almost 30 min till the onions are brown.
- Pour in the wine increase the heat and cook till the wine evapourates.
- Now add in the tomatoes lower the heat and simmer gently till you have a thick sauce about 45-60 min.
- Season with nutmeg and salt (and pepper if the sausages were not spicy) and add in the parmesan and cream.
- Cook the penne in a generous amount of boiling salted water then drain well.
- Add in the penne to the sauce combine and serve.
- Serves 6
