- 2 x ripe pears peeled
- 1Â 1/2 tsp fresh lemon juice
- 1/2 sm jicama peeled, see * Note
- 2 c. fresh spinach leaves
- 2 Tbsp. balsamic vinegar
- 1 tsp Dijon mustard
- 1 x garlic clove chopped
- 1/2 tsp freshly-grnd black pepper
- 2 Tbsp. extra virgin olive oil
- 1 x green onion - (to 2) thinly sliced
- 1 Tbsp. minced fresh basil
- 3 Tbsp. minced pecans toasted

- * Note: One (9-oz) package frzn snow pea pods may be substituted for fresh snow peas. One Red Delicious apple may be substituted for jicama.
- Cook snow peas in boiling water to cover 1 minute; drain. Plunge into ice water to stop the cooking process. Cut lengthwise into 1/4-inch strips.
- Cut pears into 1/4-inch strips; toss with lemon juice. Cut jicama and spinach into thin strips.
- Whisk together vinegar and next 3 ingredients. Gradually add in oil, whisking till mix is well blended. Stir in green onions and basil. Refrigerate15 min.
- Combine vegetable strips and pear strips. Drizzle with dressing, tossing to coat; sprinkle with pecans. Serve immediately.
- This recipe yields 4 servings.
