- 24 lbs chorizo
- 9 1/4 lbs pepper, 1" dice
- 23 7/8 lbs onions, diced
- 52 1/2 lbs tomatoes, diced, canned
- 14 lbs bow tie pasta
- 2 cups Worcestershire sauce
- 4 1/2 lbs chicken base
- 18 gallons water
- 1 1/2 lbs margarine
Инструкции
- Braise sausage until firm enough to slice, cool enough to habdle. Slice into 1/4 inch pieces. While onion, etc are cooking, brown off slices in 350F oven or open skillet/tilt fryer.
- Melt margarine and saute onions and peppers for 10-12 minutes. Add tomatoes, water, and Worcestershire sauce.
- Drain fat from sausage slices. Add sausage, bow ties, and chicken base to kettle.
- Simmer for 25-30 minutes, until bow ties are tender.
