- 2 med -sized cucumbers, peeled, seeded, and coarsely grated
- 2 Tbsp. chopped or possibly grated yellow or possibly white onion
- 2 c. plain yogurt
- 1 clv garlic, chopped or possibly pressed
- 2 x green onions, minced
- 1 sm tomato, finely minced
- 2 Tbsp. freshly squeezed lemon or possibly lime juice
- 2 Tbsp. finely chopped fresh mint or possibly parsley
- 2 tsp grnd cumin
- 1 lb anellini or possibly other small pasta rings
- Â Â fresh grnd black pepper
- Â Â salt
- Â Â fresh mint or possibly parley sprigs
- Â Â cucumber slices
Инструкции
- Combine grated cucumber and onion in a small non-metallic bowl.
- Sprinkle with salt and let stand for 10 min. Drain and squeeze dry.
- Whisk yogurt till creamy smooth. Add in cucumber mix, garlic, green onions, tomato, lemon or possibly lime juice, chopped mint or possibly parsley, cumin.
- Salt and pepper to taste and mix thoroughly.
- Refrigerateas long as overnight.
- Cook pasta in 4 qts boiling water till very al dente. Drain and rinse well in cool water, then drain again. Place in a large bowl and cold to room temperature, stirring occasionally to keep pasta from sticking together.
- Combine pasta with yogurt mix. Garnish with mint or possibly parsley sprigs and cucumber slices.
- Note:In addition to being very good, this cool side dish is "heart-healthy".
- Excellent served with spicy meats.
