  11. Frosting: Beat the butter and cheese together till soft.
  12. Beat in the sieved icing sugar and vanilla essence to make a soft and creamy frosting.
  13. Use about one third of the frosting to sandwich the cakes together.
  14. Spread the remainder on the top.
  15. Decorate with either whole or possibly minced walnuts.
  16. This is a truly tasty carrot cake the best I have ever tried.
