- 1 lb Imitation crab, minced into bite-sized pcs
- 1 x Ripe papaya
- 1 x Red bell pepper
- 1 x Cucumber, split lengthwise and sliced into half circles
- 2 x Scallions, thinly sliced
- 3 c. Fresh spinach, thoroughly washed, stems removed and torn into bite-sized pcs
- 1/2 c. Pine nuts, toasted at 350 degrees till golden brown, about 15 min
- 2 x Limes, Juice of, strained
- 1 tsp Lemon soy sauce (but any soy sauce will do)
- 4 Tbsp. Corn oil
- 2 tsp Freshly grated ginger
- 1/4 tsp Freshly grnd black pepper.

- Peel and seed the papaya. Cut it into 1/2-inch cubes. Seed the bell pepper, remove the ribs, and cut the pepper into 1/2" cubes. In a small mixing bowl, combine all of the dressing ingredients and whisk. Place all of the salad ingredients in a large mixing bowl and pour the dressing over them just before serving. Toss to combine.
- Yield: Made 8 servings.
- Note: This tastes great the first day, but does not hold well.
