- 1 lb Onions (I used Vidalias)
- 2 Tbsp. Margarine
- 2 Tbsp. Balsamic vinegar
- 1 Tbsp. Sugar
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 Tbsp. Extra virgin extra virgin olive oil

- Slice onions into thin wedges and saute/fry in margarine till brown (about 12 min). Transfer to bowl of food processor and chop slightly. Stir in remaining ingredients and mix well.
- I served this, warm, over thinly sliced broiled flank steak, alongside corn on the cob and a salad. The flavour combinations were interesting, but I think I'm going to decrease the amount of sugar next time, since the vinegar was so sweet on its own.
