Рецепт Okinawan Sweet Fritters
I grew up loving this delicate treat, both from the market in Okinawa (watching elderly women fry these up in giant cast iron pots) and made at home by my "Oba-ason" (Okinawan grandmother)". I use to wait for these little doughnuts to float on top in her pot over a wood-fed fire. (we never had a stove). Similar to the American version of sugared doughnuts, but the bean paste makes it an entirely different snack.

- 1 large egg
- 1/2 cup evaporated milk
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/3 cup chunky or smooth Japanese Bean Paste (found in Oriental Markets or select grocery stores)
- 6 cups Peanut oil or vegetable oil
- 1/4 cup sugar (optional)

- 1) In a small bowl, combine egg and milk
- 2) In a medium bowl, sift together flour, baking powder, salt, brown sugar and cinnamon.
- 3) Add the egg and milk to the flour mixture; stir until well blended. Stir in bean paste.
- 4) In a wok or shallow pan, heat oil to 350 degrees. Drop batter into the hot oil by the tablespoons. Fry fritters to be sure the batter is cooked inside.
- 5) Roll hot fritters in sugar or serve plain.
