- 1 c. Minced dates
- 1/2 c. Raisins
- 1/2 c. Dry prunes, minced
- 1 c. Water
- 1/2 c. Margarine
- 1/4 tsp Salt
- 2 x Large eggs, beaten
- 1 tsp Vanilla extract
- 1 c. All-purpose flour
- 1 tsp Baking soda
- 1/2 c. Mixed nuts, minced

- In a saucepan combine dates, raisins, prunes and water. Bring to boil and boil 5 min. Stir in margarine and salt. Set aside to cold.
- Add in remaining ingredients to fruit; stir just till dry ingredients are moistened. Spoon into greased MINI-muffin pans. Bake in preheated 350-degree oven for 15 min. (If you like can bake in a greased 11 x 7 x 2-inch pan for 30 min.)
- Yield: 32 mini-muffins.
