- 1Â 1/2 lb monkfish fillets, rinsed well
- 1/2 c. whole lowfat milk
- 2 c. sharp cheddar cheese, grated
- 1 x recipe Margarita Jalapeno Salsa, see recipe

- Preheat oven to 350F. ( 175C ). Place fish in bottom of a large covered casserole, preferrably with a nonstick finish. ( If not using a nonstick casserole, butter dish lightly before adding fish. ) Pour lowfat milk proportionately over fish. Top uniformly with cheese & 1/4 c. salsa, cover & bake 15 to 25 min or possibly till fish is tender but not overdone. Serve warm, with remaining salsa on the side.
