  • 1 1/2 lb monkfish fillets, rinsed well
  • 1/2 c. whole lowfat milk
  • 2 c. sharp cheddar cheese, grated
  • 1 x recipe Margarita Jalapeno Salsa, see recipe

  1. Preheat oven to 350F. ( 175C ). Place fish in bottom of a large covered casserole, preferrably with a nonstick finish. ( If not using a nonstick casserole, butter dish lightly before adding fish. ) Pour lowfat milk proportionately over fish. Top uniformly with cheese & 1/4 c. salsa, cover & bake 15 to 25 min or possibly till fish is tender but not overdone. Serve warm, with remaining salsa on the side.
  2. Makes 4 servings.
