- 7 gals ham stock
- 7 gals water
- 1 lb beef base
- 15 lbs navy beans, rinsed
- 7 lbs celery, diced
- 7 lbs onion, diced
- 7 lbs carrot, diced
- 2 #10 cans diced tomato
- 5 lbs ham, cooked, diced
- 2 lbs roux (1 lb butter, 1 lb flour)
- to taste: chili powder, thyme, salt, pepper
Инструкции
- Bring stock, base, and water to boil.
- Add celery, onions, carrots, tomato, and navy beans. Simmer 15 minutes.
- Bring back to boil.
- Add roux and stir until smooth.
- Add ham.
- Simmer 1 1/2 hout until 185F (84.5C) or higher is reached for at least 15 seconds.
- Adjust seasoning and hold for service.
