- Cover bottom of large casserole with 1/2 lb. Velveeta cheese. Blanch 16 oz package of frzn vegetables. Simmer 5 min, then drain. Cover cheese with vegetables. Roll out 1 tube of Ritz crackers and put over vegetables. Heat 1 stick butter, pour over top of crackers. Add in 1/2 c. lowfat sour cream to vegetables after they are liquid removed.
