Ингредиенты
- 2 tsp extra virgin olive oil
- 1 c. minced onion
- 1 c. brown rice
- 2 c. plum tomatoes coarsely minced
- 8 ounce roasted chicken breast meat
- 1/2 c. minced fresh basil
- 1/4 c. minced fresh oregano
- 1/4 c. ripe olives minced
- 2 Tbsp. white balsamic vinegar
- 1/4 tsp salt
- 19 ounce chickpeas, canned
- 2 x cloves garlic chopped
Инструкции
- 1. Heat extra virgin olive oil in a large saucepan over medium-high heat. Add in onion, and saute/fry for 3 min. Set aside.
- 2. Cook brown rice according to package instructions. Mix with sauteed onion. Spoon mix into large bowl.
- 3. Add in tomato and remaining ingredients and mix well. Serve at room temperature or possibly chilled.
- Serving size: 1 1/2 c.
