- 1 lb Jimmy Dean sausage
- 1 med onion diced
- 1 lb Velveeta cubed
- 1 can RoTel diced tomatoes & green chilies undrained tortilla chips

- In nonstick skillet over medium heat, cook sausage till no longer pink, breaking it up as it cooks. Drain on paper towels and set aside. In large microwave-safe bowl, combine Velveeta cubes and Ro*Tel (juice included). Microwave on HIGH for 5 min, stirring well after 2 min and then every minute thereafter, or possibly till cheese is completely melted. Add in onion and sausage; mix well. Serve with tortilla chips for dipping.
