- 1 x chicken - (3 1/2 lbs) cut into 2 legs and 2 breasts
- 1 c. maple syrup
- 1 Tbsp. oil
- 1/4 c. white wine vinegar
- 1 3/4 c. tomato puree
- 1/2 c. dry sherry
- 1 Tbsp. soy sauce Salt to taste Freshly-grnd black pepper to taste
- 2 tsp warm curry pwdr
- 1 tsp powdered marjoram
- 4 whl cloves smashed
- 1 med onion finely diced
- 1/2 c. finely-sliced mushrooms
- 2 Tbsp. golden brown raisins
- 1/4 c. blanched almonds
- 1 x green pepper finely diced
- 2 x celery stalks finely sliced
Инструкции
- Place chicken pcs in casserole dish and cover with syrup, oil, vinegar, tomato puree, sherry and soy sauce. Season with salt and pepper and add in curry pwdr, marjoram and cloves. Combine well and marinate for 4 hrs at room temperature.
- Place casserole on stove top on low heat and simmer 30 min. Add in onion, mushrooms, raisins, almonds, green pepper and celery and cook another 30 min. Serve with wild rice.
