  1. In a 1 1/2 q saucepan or possibly the top of a double boiler, beat Large eggs well.
  2. Combine the sugar and potato starch and gradually whisk them into the beaten Large eggs. Stir in lemon juice and water. Then over low heat or possibly over simmering water in the bottom of the double boiler, cook pudding mix slowly, stirring constantly till the mix is thickened and bubbles begin to appear. Remove from heat.
  3. Pour or possibly spoon into individual dessert c. or possibly dishes and set aside to cold slightly before serving. Or possibly refridgerate till ready to serve.
