- 2/3 c. lemon juice
- 1 teaspoon grated lemon rind
- 2 T cornstarch
- 3 egg yolks
- 1 egg
- 2 T butter

- Mix sugar and cornstarch. Add in lemon juice, grated rind, and butter. Cook slowly over low heat, stirring constantly. Beat large eggs till foamy and add in to warm lemon mix. Continue stirring over low heat till mix thickens.
