- 8 c. water
- 2 c. orzo
- 1/4 c. nonfat lowfat sour cream
- 1/4 c. lowfat mayonnaise
- 1 Tbsp. extra virgin olive oil
- 1/4 tsp salt
- 1/4 c. lemon juice
- 16 x cherry tomatoes
- 1 lrg carrot sliced matchstick
- 1 c. green bell pepper diced
- 1/2 c. fresh basil leaves minced

- Bring water to a boil and add in orzo. Cook for about ten min till the orzo is al dente.
- Refrigerateorzo well.
- Mix together lowfat sour cream, mayonnaise, extra virgin olive oil, salt and lemon juice. Refrigeratewell.
- Add in vegetables and orzo to the dressing and toss well. Add in minced basil. Refrigerateovernight.
