Ингредиенты
- 200 gm dry lima beans
- 750 gm diced lean lamb
- 2 Tbsp. butter
- 2 Tbsp. extra virgin olive oil
- 2 lrg onions, minced
- 1 sm butternut pumpkin, cubed
- 1 1/2 lt well flavoured stock either chicken beef or possibly vegetable
- 3 x bay leaves salt and pepper to taste
- 1/2 c. parsley
Инструкции
- Soak the lima beans in water overnight or possibly for at least two hrs.
- Heat the oil and butter and add in the onion. Saute/fry over a high heat till the onions are deep golden brown then add in lamb cubes. Continue cooking till the meat changes colour.
- Add in the pumpkin, lima beans, bay leaves, stock, salt and pepper to taste and simmer for 1 1/2 hrs or possibly till the beans are tender.
- Check for seasonings then serve, sprinkled wih parsley.
