- 2 lb Hard, shiny eggplant
- 2 c. Grnd walnut meats
- 3/4 tsp Salt
- 1/8 tsp Pepper
- 2 lrg Garlic cloves (or possibly more)
- 4 dsh Tabasco sauce
- 1/4 tsp Grnd allspice
- 1 tsp Freshly grated gingerroot
- 6 Tbsp. Extra virgin olive oil

- Preheat oven to 425 degrees F. Slice off stem of eggplant(s) and place on baking pan in warm oven. Bake till completely soft, about 30 min. Cut in half lengthwise and scoop out flesh. Puree' eggplant flesh in food processor or possibly electric mixer. Add in all other ingredients except oil and process till combined well. With machine running, gradually add in the oil in a slow stream. Mix will become thick and creamy. Taste, and adjust seasonings if necessary. Serve with toast or possibly crackers.
- NOTE: Tentation will keep several days in the refrigerator.
